Anzac Biscuits
This is a recipe for traditional anzac biscuits that were baked and sent in care packages to the men in world war one. On the 25th of April kitchens all over Australia fill with the sweet smell of these biscuts being baked as a comeraration of our ancestors sacrifice.
Ingredients
- 125g Butter, Chopped
- 2 Tablespoons Golden Syrup
- 1/2 Teaspoon Bicarbonate of Soda
- 2 Tablespoons Boiling Water
- 1 Cup (90g) Traditional Rolled Oats
- 1 Cup (150g) Plain Flour
- 1 Cup (220g) Caster Sugar
- 3/4 Cup (65g) Desiccated Coconut
Method
Preheat oven to slow (150 C / 130 C Fan Forced).
Lightly grease oven tray
Combine butter and golden syrup in a saucepan, stir over low heat until butter is melted. Stir in combined soda and water.
Combine flour, oats, sugar and coconut in a large bowl. Add butter mixture, mix well.
Drop round teaspoons of the mixture about 4cm apart on a greased oven tray, flattern slightly.
Bake in slow oven for about 20 minutes or until browned lightly. Cool on trays.
